Mexico – Triunfo Verde Cooperative
Navigator comes from the Triunfo Verde Cooperative in the highlands of Chiapas, Mexico — a region celebrated for its lush biodiversity and sustainable coffee production. The cooperative’s farms are located within the buffer zone of El Triunfo Biosphere Reserve, one of the world’s most diverse cloud forests and home to thousands of protected plant and animal species.
The farmers here treat their land like the living ecosystem it is — growing coffee beneath a dense canopy of native trees and maintaining natural wildlife corridors to support bird and animal migration. The result is a coffee that’s as environmentally conscious as it is flavorful.
The cooperative is made up of over 340 smallholder farmers, led by Hugo Lares, with quality control overseen by Calixto Guillén — a passionate advocate for quality and community impact. Together, they’ve built a program that blends ecological responsibility with exceptional cup quality.
Process: Mountain Water Decaf (MWP)
Navigator is decaffeinated through a Mountain Water Process, a gentle, chemical-free method performed at the Descamex facility in Mexico. Green coffee beans are soaked in pure mountain water, which draws out caffeine and soluble compounds. The caffeine is then filtered out, and the flavorful water — now caffeine-free — is reintroduced to the beans so they can reabsorb their natural character.
This careful process preserves the coffee’s integrity, ensuring that even without caffeine, you still get a cup that’s rich, balanced, and full of depth.
