Wulong, pronounced Oolong are different from black teas in that they are only partially oxidized. Hairy Crab (Mao Xie) is a lightly oxidized oolong offering an incredible freshness. It is named for the fine “hairs” on the backside of the leaves. The leaves are rolled, a mix of light and dark greens, and unfurl to a truly delicious cup with delicate floral notes.
