Founded in 2001 by Fidel Paz, it represents the realization of his father Cantalicio Paz’s lifelong vision: to bring the coffees of Santa Bárbara to a global stage without losing the integrity of how they’re grown, handled, and respected.
Situated near Lake Yojoa at the base of the Santa Bárbara mountain range, this region benefits from a rare microclimate that plays a defining role in the cup. Cool mountain air meets warm lake influence, creating slower cherry maturation and deeper sugar development — the kind of quiet advantage you don’t rush and can’t replicate.

Working alongside more than 1,500 smallholder producers, San Vicente operates as both a guide and a partner. From planting and harvesting to processing and lot selection, they help refine each step with a level of care that ensures consistency without stripping away individuality. The “HB” designation refers to Hard Bean coffees, grown at elevations above 1,200 meters above sea level. These high-altitude conditions slow cherry development, allowing sugars and complexity to fully form. Hard Bean coffees are also commonly referred to as HG, or High Grown — a mark of both elevation and quality.
