Nestled in the lush highlands of Sidama, near the majestic Bombe Mountain, the Testi Ayla Washing Station stands as a beacon of quality and tradition in Ethiopian coffee production. Founded in 2010 and joining the Testi group in 2016, this station is pivotal in the lives of around 375 smallholder farmers in the Bombe village, providing crucial support and infrastructure for their coffee cultivation.
These farmers, each tending to an average of 2.5 hectares, cultivate esteemed local varieties like Mikicho and Setami, which are celebrated for their distinctive flavors. The Sidama region, a veritable powerhouse in Ethiopian coffee production, is famed not only for its volume but also for its high-grade beans. The region benefits from a unique confluence of geographic and climatic conditions: its fertile highlands are cooled by the surrounding rivers and lakes, and the area receives over 100 inches of rainfall annually. This environment allows the coffee cherries to mature at a languid pace, deepening the complexity of flavor that is a hallmark of Sidama coffee. At Testi Ayla, every bean is a testament to the rich coffee heritage and meticulous care that define this extraordinary coffee-growing community.

This exquisite light/medium roast captures the essence of the Sidama region's celebrated coffee culture. As the holiday season approaches, we couldn't resist bringing our patrons a bean of unmatched quality and a profile that is as celebratory as it is rare.
Origins and Craft: We specifically sought out a distinctive Ethiopian bean to diversify our offerings and re-introduce a high-caliber Ethiopian coffee to our lineup after a significant hiatus. Ayla Bombe is sourced from the renowned Sidama zone, where the unique interplay of altitude, climate, and soil nurtures coffee cherries with complex and vibrant flavors. During our meticulous selection process, the Ayla Bombe stood out not only for its quality but also for its compelling flavor narrative.
Roasting Philosophy: The roasting journey for Ayla Bombe is driven by our commitment to highlight its inherent qualities without overpowering its delicate notes. We opted for a light/medium roast to amplify the bean's natural sweetness and allow its subtle floral and fruit undertones to shine. The bean’s initial aroma of caramel and blueberry with a hint of leather evolves upon brewing, revealing deeper notes of grape, vanilla, and jasmine. This precise roasting approach ensures a cup that is as complex as it is satisfying, bringing forth flavors of creamy blueberry cobbler, currant, and a melodic finish of cantaloupe and jasmine.
